Back to School Dinners- Quick and Easy

So, winter break is over and it's time to get ready for the week. I put together 5 quick and easy meals (kiddie and parent style) to get your week started and set yourself up for meal planning success! These pics just show the joys associated with good food and treats (like flavored shaved ice-yum!)




Meal 1
Yellow rice and chicken and salad

Pick up a pack of yellow rice and a rotisserie. Mix it all together and voila!
For the parents (or kids that will eat salad), buy some romaine and toss in olives, tomato, onion, sprinkle some Italian seasoning, and croutons. Or salad in a bag. Because that's easy and awesome.

Meal 2
Taco Tuesday with steam fresh veggies.

It's Tuesday. Just never think about it again a day in your life. It's taco Tuesday every week, period.

Parents- eat a taco or make a taco salad. Ay que bueno!

Meal 3
Breakfast for dinner

We aren't kings and queens here. Whip up some eggs, toast, and morning sausage. Serve healthy cereal or oatmeal and fruit. Toast, yogurt, and fruit. Bam! Done.

Meal 4
Meatless Dinner

Mac and cheese or pasta prepped how you like it (sauce, butter--you decide!) Add a veggie or fruit as a side. Whatever veggie your kids will eat. Cooked carrots, raw carrots, a banana, whatever.

Parents- if you want to get some Beyond Burger meat, this can be really tasty if you add a sauce you like. It's really good mixed up with some roasted veggies (carrots, broccoli, onion). You're welcome!

Go ahead and throw a couple of peeled bananas in the fridge earlier in the week. I usually wrap mine in paper towels. For dessert, throw the bananas and a splash of milk in the blender. This turns out like the most delicious healthy ice cream. You can even drizzle a little chocolate syrup on top if you're feeling daring ;)

Meal 5

Yay! It's Friday. Don't think about dinner tonight. Order take out and throw in a pizza or prepare nuggets, fruit, and cheese for the kids. You've already prepped four meals. It's time to rest and kick up your feet and pour yourself a glass of wine.
